I know Oracle use it for production now in their data centers. At OpenWorld last year I spoke to Wim Coekaerts who told me all about Oracle's investment in the product.

The money Oracle save by using Oracle VM is massively more than the cost of producing it. We're talking million of dollars. They are committed to it, even if nobody buys it because to the money they save. The fact they can sell it as a product is a bonus. :)
